Simple Supper Friday: Top Round and Kale with Almond Sauce

Tonight’s dinner came together quite well, despite the fact that when I got started in the kitchen, I had no idea what I was doing. It was a freestyle meal for sure, but easy nonetheless.

I started with cauliflower rice, knowing I wanted to create something tasty to eat on top of it. After ricing the cauliflower, I chopped a shallot, still not knowing what the heck I was doing. Then, I thinly sliced a nice piece of grass-fed top round.

I continued to slowly move forward with my cooking process … winging it, I suppose. So what did I concoct? Well, see for yourself.

For the rice:

  • 1 small head of cauliflower, grated in a food processor
  • 1 tsp coconut oil
  • Sea salt and pepper to taste

For the sauté: 

  • 2 tsp coconut oil
  • 1 shallot, chopped
  • 1 clove garlic, minced
  • 1/2 lb grass-fed top round, thinly sliced
  • 1 small bunch red leaf kale, removed from stem and torn into pieces
  • Sea salt and pepper to taste
  • Dash of red pepper flakes

For the sauce:

  • 1 Tbsp almond butter
  • 1 tsp coconut butter
  • Sea salt to taste
  • 1/4 tsp ground ginger
  • 1/8 tsp garlic powder
  • 1 tsp olive oil
  • 1 tsp unseasoned rice vinegar
  • 1 tsp unsweetened applesauce
  1. Heat coconut oil in a pan over medium heat. Add shallot and garlic and sauté until softened a bit. Add the top round and season with salt and pepper.
  2. While meat is browning, cook the cauliflower rice. In another pan, heat the coconut oil over medium heat. Add the grated cauliflower and season with salt and pepper. Sauté for about 5 minutes, stirring occasionally and then set aside.
  3. In a small dish, combine all the ingredients for the sauce and mix well. Feel free to adjust the amount of seasoning and other ingredients to your liking. The sauce will be somewhat thick.
  4. Once the meat is browned (about 4-5 minutes), add the kale, red pepper flakes and salt and pepper to taste. After a couple minutes, pour in the sauce and mix well throughout the sauté. Serve over cauliflower rice.
