Chocolate Chip Cookie Dough Bites

Chocolate chip cookie dough bitesBehold: chocolate chip cookie dough that you can eat with abandon.  No eggs, dairy, gluten or grains, but full of the crucial things like really good dark chocolate chips and vanilla.

This cookie dough is totally safe to eat, made with real food ingredients and isn’t too sweet. It’s portioned into perfect little bite-sized pieces too. Just try not to eat the whole batch at once!

Chocolate chip cookie dough bitesMaking these cookie dough bites actually reminded me of a roommate I had in college. She had a mega sweet tooth, and would whip up a batch of cookie dough for the sole purpose of eating the dough. Once she got her fix, she would bake whatever was left. I sampled the dough a time or two because let’s be real, I wasn’t gonna say no to cookie dough!

These no-bake chocolate chip cookie dough bites are loaded with healthy fats from coconut and almond, and studded with bittersweet dark chocolate chips. Egg-free, dairy-free and grain-free!

Ingredients
  • 3/4 cup blanched almond flour
  • 1 Tbsp coconut flour
  • 2 Tbsp coconut sugar
  • Pinch of sea salt
  • 3 Tbsp coconut oil, melted
  • 2 Tbsp full-fat coconut milk
  • 1 Tbsp pure vanilla extract
  • 1/4 cup good-quality dark chocolate chips
Instructions
  1. Mix all the ingredients, except the chocolate chips in a large bowl. Once mixed, fold in the chocolate chips.

  2. Roll into tablespoon-sized balls and place on a parchment-lined plate. Chill in the fridge for 20-30 minutes before eating, unless you prefer softer dough bites.

  3. Store any leftovers in the refrigerator and eat within 2-3 days.

Recipe Notes

I used THESE 85% bittersweet dark chocolate chips and THIS BRAND of blanched almond flour. Both are excellent!
