Slow Cooker Curried Chicken Stew

This stew is becoming a new staple in my house. I’ve made it numerous times already and enjoyed it immensely each time. It kinda has that comforting chicken soup vibe to it and feels so good to eat. The chicken is slow cooked, tender, and easily shreds apart. The stew is well-spiced, flavorful, nourishing, and loaded with veggies. It’s the epitome of a perfect meal and has been especially nice on some of the chillier days we’ve been having. It may officially be spring, but it’s still cold! Plus, you really can’t beat curry, can you?

Ingredients:

  • 2 lb boneless skinless chicken breasts
  • 1 yellow onion, chopped
  • 1-inch piece ginger, peeled and finely chopped
  • 3 cloves garlic, minced
  • 2 Tbsp curry powder
  • 1 Tbsp paprika
  • 1 tsp ground turmeric
  • Sea salt, to taste
  • 13.5 oz can full-fat coconut milk (I like this brand)
  • 1 cup chicken stock or bone broth, preferably homemade
  • 1/2 lemon, juiced
  • 2 Tbsp coconut aminos (find HERE)
  • 2 medium sweet potatoes, peeled and cubed
  • 2 large carrots, peeled and chopped
  • 1 bunch Italian kale, chopped
  • 1 cup frozen peas

Directions:

  1. Place the chicken, onion, ginger, garlic, curry, paprika, turmeric, sea salt, coconut milk, broth, lemon juice and coconut aminos in the slow cooker. Cover and cook on high for 2 hours.
  2. Add the sweet potatoes and carrots to the slow cooker and let cook for another 2 hours. Break up and shred the chicken a bit, and then add the kale and peas. Let cook for another 20-30 minutes or until kale has softened a bit.
  3. Serve on its own or over cauliflower rice.

Yields: ~6-7 servings

Simple Supper Friday: Chicken Curry (in a hurry!)

Chicken curry

Dinner was a bit on the later side this evening, as I was out at an employee appreciation event on Jesse’s behalf for Fulcrum Fitness, where he currently serves as the fitness director. We got home well past our regular dinnertime, so I really had to whip something up on the fly. I knew we had plenty of veggies in the fridge and some chicken breasts, so I turned to an old favorite and always satisfying, chicken curry. As long as there’s curry paste, coconut milk, protein and veggies, this can be created in the blink of an eye!

Ingredients:

  • 1 Tbsp coconut oil
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 small yellow onion, chopped
  • 1 small head of broccoli, chopped (probably about 1.5 cups)
  • 2 large carrots, chopped
  • 1 Tbsp Thai red curry paste (or more if you like it spicier)
  • 1 8.5 oz box Aroy-D coconut milk (or 1/2 – 2/3 of 14 oz can)
Directions:
  1. Melt coconut oil in a pan and add onion. Let sauté for a few minutes over medium heat.
  2. Add chicken breast pieces and sauté about 5 minutes more.
  3. Add coconut milk and curry paste. Stir well to make sure curry paste breaks down and mixes into the milk.
  4. Add broccoli and carrots, and mix well.
  5. Bring to a simmer, then reduce heat to medium-low and cover. Let simmer for about 10 minutes or until chicken is cooked through.
  6. BAM dinner is done! Serve and eat. Yields 2-3 servings.
