Fourth of July Panna Cotta

Fourth of July is only five days away! Can you believe it? I’m never totally ready for it to come because summer always seems to fly by in the blink of an eye after the Fourth is over. We don’t have any plans other than working a little that morning (I am anyway — not sure about Jesse) and keeping our kitties company in the evening. Our cat, Frankie, is terrified of fireworks and loud noises in general, but our other cat, Dutch doesn’t seem to mind much. Anyway, we want to be there for Frankie since she gets so stressed out. Poor kitty. During the day, maybe we’ll go for a bike ride or something. We’re playing it by ear.

Meanwhile, if you’re looking for a festive, healthy, and patriotic dessert to make, look no further. I’ve got you covered with this non-dairy Fourth of July panna cotta featuring coconut milk, blueberries, and raspberries. It has a hint of lemon flavor thanks to the lemon essential oil and tastes wonderful with the fresh berries.  If you don’t have access to the lemon essential oil, you can substitute lemon extract instead (1 tsp is probably enough, but it depends how lemony you want it). Strawberries would also be a great addition to this dessert if you want to add some extra red color and more berry flavor.

Ingredients:

  • 13.5 oz can full-fat coconut milk (this brand is great and has no gums)
  • 2 tsp pure vanilla extract
  • 3 Tbsp cold filtered water
  • 1-1/4 tsp gelatin powder, preferably grass-fed (I recommend this one or this one)
  • 1-2 Tbsp raw honey, or more if you want it sweeter
  • 4 drops high-quality, dietary-safe lemon essential oil (learn where to get therapeutic grade oils here)
  • Fresh blueberries and raspberries or strawberries, for serving
  • Toasted slivered almonds, for serving
  • Unsweetened coconut flakes or chips, for serving

Directions:

  1. Pour water into a small bowl and sprinkle in the gelatin powder, allowing it to bloom. Set aside.
  2. Pour the coconut milk into a small saucepan and heat on the stove over medium heat. Whisk in the vanilla and honey. Once the honey is fully dissolved, add the gelatin mixture and whisk until dissolved. Remove from heat and whisk in the lemon essential oil.
  3. Divide mixture equally among three individual size glasses or small bowls (small mason jars also work well). Place in fridge to set for at least 4 hours.
  4. Once set, top with desired amount of fresh blueberries and raspberries. Garnish with the slivered almonds and coconut.

Yields: 3 servings

I was recently contacted by Ark Elements to try out their meal service and am excited to share my experience with all of you. Please know, the thoughts expressed in this post are my own and even though I received a week of complimentary meals, I was not compensated in any way to write this review.

What is Ark Elements?

Ark Elements is a Portland-based company that creates locally-sourced, well-crafted paleo foods in small batches. Their foods make evolutionary sense and are minimally processed for maximum progress.

They seek true health and sustainability, and created the Ark Elements as a guide. They believe these Elements are the foundation for optimal health:

  • we feel better when we move, so we practice functional fitness.
  • we feel better when we eat well, so we nourish ourselves through whole eating.
  • we feel better when we’re outside, so we play in our world.
  • we feel better when we’re with people, so we build a like-minded community.

How does Ark Elements work?

Each week, a new menu is posted on the Ark Elements website and you can go in and place an order between Sunday and Friday. You do not need a subscription to order and there are no strings attached. The only requirement is that you order a minimum of $55 worth of food, which is easy to do on your own, but you could also split it with a friend, roommate, family member, etc. After your initial order, you do not need to place reoccurring orders. You can truly order as little or often as you want.

During the checkout process, you select a pick-up location where you’ll retrieve your food the following Tuesday. But, guess what? Starting sometime this month, Ark Elements will do home deliveries, so the process will be even more convenient!

My Experience

I tried the grilled chicken Waldorf kale salad, grass-fed beef meatballs with figs and bacon over yam and zucchini noodles, yam hash with sage apple sausage and a baked egg, red curry chicken over almond and green onion cauliflower rice, and fennel and herb crusted pork tenderloin with roasted seasonal vegetables. I also ordered a batch of almond flour biscuits and grain-free pumpkin seed granola. The online ordering and checkout process was so easy and took me a matter of minutes. Also, all the ingredients were listed online for each menu item and macros too.

When I got my order, all my meals were clearly labeled and in their own individual containers. As I started tackling away at them each day, I was surprised how much food each container actually contained. It looked like a decent amount in the container, but it always amounted to much more when I emptied it into a dish to reheat. It was actually a real serving size and enough food! Often, it seems like these sorts of things can skimp on serving sizes, but Ark Elements does it right. Each meal was satisfying and I didn’t feel like I needed to eat more with it, other than maybe an almond flour biscuit to use as a vehicle to scoop up bites with (those biscuits pair well with everything too).

Also, all the food (that needed reheating) reheated very well with no weird taste or texture afterward. I enjoyed all the meals a lot and felt very spoiled with this service! If I had to pick a favorite out of everything I tried though, it’d be the meatballs (pictured below). Those were unbelievable. The pork tenderloin (see photo above) was a close second, but like I said, I liked it all. In case you’re wondering, the granola was nice as a treat and not something I ate as a meal. That stuff is dangerously delicious and pretty darn dense too. I liked sprinkling a couple tablespoons into a small dish of plain whole milk yogurt as a little post-dinner treat.

All in all, I would definitely use this service again because the food was incredible. And, really, you can’t beat the convenience. With that said, if you live in Portland, I highly recommend giving Ark Elements a try sometime. You can even buy some of their items directly at New Seasons — the grain-free granola (cereal aisle) and a selection of meals too (in the grab n’ go refrigerated section). Intro to Essential Oils Class in PDX

Young Living Essential Oils

I am definitely hooked on essential oils. I’ve been using them for a little while now, and have been able to totally revamp my household cleaning and skincare routine. It’s so satisfying to be able to make my own products and support whole body wellness with these oils. I use them on a daily basis for all different things, and my husband uses them too. We choose to use Young Living essential oils, which are high-quality, therapeutic grade. How to get started:

You have two options for getting started: as a wholesale member or as a retail customer through the Young Living website.

Your best bet is to join as a wholesale member because it allows you a 24% discount on every product offered.  Keep in mind, becoming a member is NOT signing your life away and you have no obligations to sell, place orders every month, have a minimum order or even buy more. But, to maintain your member status and get your discount, you have to place an order of 50 PV (product value) or more per year. This isn’t much at all (equates to around $50 or so). Retail members, on the other hand, pay regular retail prices and don’t get any sort of discount on products.

To start as a wholesale member, you first need to purchase a starter kit. Your best bet is the premium starter kit, which I highly recommend. You get 11 essential oils, a diffuser and more — all for nearly 50 percent off the retail price! It’s the kit of all kits and no other starter kit contains this many oils. This is the kit I started with and it’s been fantastic. You really do get a lot of bang for your buck.

The Premium Starter Kit is valued at over $300. As a wholesale member, you get this at about 50 percent off for $160! You also get to choose your own diffuser too. The kits with the home and dewdrop diffuser are the same price, but the price goes up for the Bamboo or Aria diffuser (the dewdrop diffuser is seen in the picture below).

Choose-Your-Diffuser

How to sign up as a Young Living wholesale member:

1. Click on the sign-up page. You will need a sponsor in order to start. My member number should appear on the page, 2225243.

2. Choose, “Sign Up As: Young Living Wholesale Member.” This will make you a distributor (really, you’re just a member, unless you decide to embark on the business side of things). If you select retail customer, you will not receive the wholesale discount.

3. The “Enroller ID” and “Sponsor ID” boxes should already be filled in for you (enter 2225243 if the boxes are empty).

4. Fill out your name, billing address, shipping address and contact info. You are asked to enter your social security number for tax purposes. If you make over $600/year selling Young Living products, you will receive a 1099 in the mail, which is required by law. Young Living will never share this info with anyone and this is protected just like in an employer/employee relationship. You do have the option to use a tax ID instead or you can call customer service and give the info over the phone: 1-800-371-3515. You can get an EIN from the IRS in just a few seconds HERE and use that number instead (the IRS just needs to be able to connect some number with you for tax purposes).

5. Create a password and pin, which you will use to log into your account and order product. Make sure to write this down!

6. Select your enrollment order. This is where you specify which Starter Kit you want. Again, I recommend the Premium starter kit. Remember, you must sign up with a kit to become a wholesale member. To maintain your 24 percent discount going forward, you only need to place a 50 PV minimum order each year on any product in the Young Living store. You will have no monthly obligation to buy or sell ever and there are no additional fees!

7. If desired, set up your optional Essential Rewards Program. ER is not a requirement to sign up as a wholesale member. This is a rewards program you can opt into to start earning money back to help pay for your oils. You can skip this step by selecting, “No, thank you. I plan on enrolling in the Essential Rewards Program later.” Read more about essential rewards here.

8. Agree to Terms & Conditions.

9. Confirm your order and enrollment info. To confirm, the tool will log you in and show you your order again, and will make you enter in your payment information again.

10. Add any additional product that you would like with your starter kit (capsules, other oils, etc.).

11. Check out and you are DONE!

Hooray, now you’re a member! Remember, your membership will renew each year as long as you order a 50 PV (product value) or more order in a calendar year. Trust me, this won’t be a problem! The kit is a one-time deal and you do not have to buy another one each year to continue.
