Chocolate Mint Popsicles

These chocolate mint popsicles are creamy and full of mint chip flavor. Not only that, but they’re dye-free, have no refined sugar, include a dose of protein and probiotics, and have vitamins and minerals from the spinach (and natural light green color to boot). They are not your average popsicle. They’re the perfect healthy treat on a hot day and I’ve definitely been enjoying my fair share. I went through two rounds of experimenting with this recipe, so I’ve had a freezer full. No complaints on my end!

In the directions, you’ll notice that I don’t add the chocolate pieces to the blender. It doesn’t work all that well if you do and I know since I tested it this way on my first trial run. The chocolate pieces break up a bit more, but then sink to the bottom, which means you then have to scoop them out by hand.

Ingredients:

  • 1.5 cups coconut cream (I used this brand, which has no gums)
  • 3/4 cup plain whole milk Greek yogurt, preferably grass-fed (I used this brand)
  • 2 tsp pure vanilla extract
  • 1 Tbsp raw honey (use more if you want it sweeter)
  • 3 cups loosely packed fresh spinach
  • 3-4 drops high-quality, dietary-safe peppermint essential oil OR 1/2 tsp peppermint extract (learn where to get therapeutic-grade oils here)
  • 2.5 oz good-quality dark chocolate bar, finely chopped (I used this one, which is lightly sweetened with coconut sugar)

Directions:

  1. To a high speed blender container, add all the ingredients, except the chocolate. Blend on high until smooth.
  2. Pour mixture into popsicle molds, leaving a little space at the top of each mold. Then, disperse chocolate evenly among the molds. Top off with more of the mixture and stir a little with popsicle stick, if desired (chocolate will distribute a bit during freezing though).
  3. Freeze for 6-7 hours or overnight. Once ready, rinse mold under hot water briefly to remove popsicle.

Note: I used these molds, but the Dixie cup & popsicle stick method will do the trick as well. Just put the stick in halfway through freezing. This way, the sticks will stay centered.

Yields: 6 popsicles

 

Fourth of July Panna Cotta

Fourth of July is only five days away! Can you believe it? I’m never totally ready for it to come because summer always seems to fly by in the blink of an eye after the Fourth is over. We don’t have any plans other than working a little that morning (I am anyway — not sure about Jesse) and keeping our kitties company in the evening. Our cat, Frankie, is terrified of fireworks and loud noises in general, but our other cat, Dutch doesn’t seem to mind much. Anyway, we want to be there for Frankie since she gets so stressed out. Poor kitty. During the day, maybe we’ll go for a bike ride or something. We’re playing it by ear.

Meanwhile, if you’re looking for a festive, healthy, and patriotic dessert to make, look no further. I’ve got you covered with this non-dairy Fourth of July panna cotta featuring coconut milk, blueberries, and raspberries. It has a hint of lemon flavor thanks to the lemon essential oil and tastes wonderful with the fresh berries.  If you don’t have access to the lemon essential oil, you can substitute lemon extract instead (1 tsp is probably enough, but it depends how lemony you want it). Strawberries would also be a great addition to this dessert if you want to add some extra red color and more berry flavor.

On another note, I went back on KATU Afternoon Live yesterday and made my summer “grain” salad with lemon tahini dressing. Watch the replay of the segment HERE.

Ingredients:

  • 13.5 oz can full-fat coconut milk (this brand is great and has no gums)
  • 2 tsp pure vanilla extract
  • 3 Tbsp cold filtered water
  • 1-1/4 tsp gelatin powder, preferably grass-fed (I recommend this one or this one)
  • 1-2 Tbsp raw honey, or more if you want it sweeter
  • 4 drops high-quality, dietary-safe lemon essential oil (learn where to get therapeutic grade oils here)
  • Fresh blueberries and raspberries or strawberries, for serving
  • Toasted slivered almonds, for serving
  • Unsweetened coconut flakes or chips, for serving

Directions:

  1. Pour water into a small bowl and sprinkle in the gelatin powder, allowing it to bloom. Set aside.
  2. Pour the coconut milk into a small saucepan and heat on the stove over medium heat. Whisk in the vanilla and honey. Once the honey is fully dissolved, add the gelatin mixture and whisk until dissolved. Remove from heat and whisk in the lemon essential oil.
  3. Divide mixture equally among three individual size glasses or small bowls (small mason jars also work well). Place in fridge to set for at least 4 hours.
  4. Once set, top with desired amount of fresh blueberries and raspberries. Garnish with the slivered almonds and coconut.

Yields: 3 servings

Whipped Dairy-Free Lemon Frosting

I don’t share sweet stuff very often because it is not something that I regularly consume or make. But, special occasions and social gatherings are a good reason to make a treat. In this instance, Jesse and I had plans to go over to our friend’s house for dinner this past Saturday. They took on the main course, sides and drinks, and I agreed to make a dessert. I debated for a long time about what to make and decided that I wanted something springy, especially since it was Easter weekend.

After much browsing on Pinterest, I decided to make this coconut flour cake recipe. To jazz up the cake a bit, I thought I’d make some frosting to go on top. I knew I wanted the base to be from palm shortening and also wanted lemon involved (to add that springy flavor). This recipe is what I came up with and I am so pleased with how it turned out. It is light and lemony, with a whipped texture. It almost seems like a cross between frosting and icing, especially with its slightly shimmery appearance. It tasted great on the coconut flour cake (this cake recipe is amazing and super moist!) and was a HUGE hit with everyone!

Also, this recipe makes quite a bit of frosting and is enough for a double layer cake. I actually ended up making two of the coconut flour cakes, so I could turn it into a double layer and use up the rest of the frosting. I garnished the top with grated lemon zest and definitely recommend doing so for a finishing touch!

The frosting doesn’t have to be stored in the refrigerator, but will keep longer that way if you aren’t going to use it right away or have leftovers.  It will firm up quite a bit in the fridge because of the coconut cream concentrate (coconut butter), so remember to allow it to soften at room temperature before using. You may also want to refrigerate it in the summertime because it will get slightly melty when warm.

Please make sure to only use pure therapeutic essential oils for cooking. Many essential oils that are sold in stores are not 100% pure and can be chemically adulterated. These are not meant for consumption! My essential oil of choice is Young Living. Learn where to get high quality essential oils HERE.

Whipped Dairy-Free Lemon Frosting

Ingredients:

  • 3/4 cup organic palm shortening (find here) –>not to be mistaken for red palm oil!
  • 7 oz. box coconut cream concentrate, melted (find here)
  • 3-4 Tbsp raw honey
  • 1 tsp pure vanilla extract
  • 1/4 tsp grated lemon zest
  • 2 drops lemon essential oil (learn where to get therapeutic grade oils here)

Directions:

  1. Add all the ingredients except the lemon essential oil to the the bowl of your stand mixer. Whip the frosting a couple minutes or until smooth. Alternatively, you can use a hand mixer.
  2. Scrape down the sides of the bowl with a rubber spatula and then add the lemon essential oil. Whip again briefly to incorporate the essential oil.
  3. Enjoy on your favorite grain-free cake or cookie recipe for a special occasion!

Young Living Essential Oils

I am definitely hooked on essential oils. I’ve been using them for a little while now, and have been able to totally revamp my household cleaning and skincare routine. It’s so satisfying to be able to make my own products and support whole body wellness with these oils. How to get started:

You have two options for getting started: as a wholesale member or as a retail customer through the Young Living website.

Your best bet is to join as a wholesale member because it allows you a 24% discount on every product offered.  Keep in mind, becoming a member is NOT signing your life away and you have no obligations to sell, place orders every month, have a minimum order or even buy more. But, to maintain your member status and get your discount, you have to place an order of 50 PV (product value) or more per year. This isn’t much at all (equates to around $50 or so). Retail members, on the other hand, pay regular retail prices and don’t get any sort of discount on products.

To start as a wholesale member, you first need to purchase a starter kit. Your best bet is the premium starter kit, which I highly recommend. You get 11 essential oils, a diffuser and more — all for nearly 50 percent off the retail price! It’s the kit of all kits and no other starter kit contains this many oils. This is the kit I started with and it’s been fantastic. You really do get a lot of bang for your buck.

The Premium Starter Kit is valued at over $300. As a wholesale member, you get this at about 50 percent off for $160! You also get to choose your own diffuser too. The kits with the home and dewdrop diffuser are the same price, but the price goes up for the Bamboo or Aria diffuser (the dewdrop diffuser is seen in the picture below).

Choose-Your-Diffuser

How to sign up as a Young Living wholesale member:

1. Click on the sign-up page. You will need a sponsor in order to start. My member number should appear on the page, 2225243.

2. Choose, “Sign Up As: Young Living Wholesale Member.” This will make you a distributor (really, you’re just a member, unless you decide to embark on the business side of things). If you select retail customer, you will not receive the wholesale discount.

3. The “Enroller ID” and “Sponsor ID” boxes should already be filled in for you (enter 2225243 if the boxes are empty).

4. Fill out your name, billing address, shipping address and contact info. You are asked to enter your social security number for tax purposes. If you make over $600/year selling Young Living products, you will receive a 1099 in the mail, which is required by law. Young Living will never share this info with anyone and this is protected just like in an employer/employee relationship. You do have the option to use a tax ID instead or you can call customer service and give the info over the phone: 1-800-371-3515. You can get an EIN from the IRS in just a few seconds HERE and use that number instead (the IRS just needs to be able to connect some number with you for tax purposes).

5. Create a password and pin, which you will use to log into your account and order product. Make sure to write this down!

6. Select your enrollment order. This is where you specify which Starter Kit you want. Again, I recommend the Premium starter kit. Remember, you must sign up with a kit to become a wholesale member. To maintain your 24 percent discount going forward, you only need to place a 50 PV minimum order each year on any product in the Young Living store. You will have no monthly obligation to buy or sell ever and there are no additional fees!

7. If desired, set up your optional Essential Rewards Program. ER is not a requirement to sign up as a wholesale member. This is a rewards program you can opt into to start earning money back to help pay for your oils. You can skip this step by selecting, “No, thank you. I plan on enrolling in the Essential Rewards Program later.” Read more about essential rewards here.

8. Agree to Terms & Conditions.

9. Confirm your order and enrollment info. To confirm, the tool will log you in and show you your order again, and will make you enter in your payment information again.

10. Add any additional product that you would like with your starter kit (capsules, other oils, etc.).

11. Check out and you are DONE!

Hooray, now you’re a member! Remember, your membership will renew each year as long as you order a 50 PV (product value) or more order in a calendar year. Trust me, this won’t be a problem! The kit is a one-time deal and you do not have to buy another one each year to continue.
