This slow cooked spiced apple cider pulled pork is tender, flavorful and so easy to make. It's made with fresh apple cider, and seasoned with chili powder and paprika. Pair it with your favorite veggies for a simple and delicious meal.
Generously season pork roast with sea salt and black pepper. Heat avocado oil in a large pan over medium heat and add the pork roast. Place the sliced onion and garlic around the pork. Sear the roast 3-4 minutes each side while occasionally stirring the onion and garlic mixture.
Once pork has been seared, add to the bottom of the slow cooker. Keep the onion mixture in the pan over low heat and add about half the apple cider to deglaze the pan. Then, add the mixture to the slow cooker, along with the chili powder, paprika and remaining apple cider. Season with a bit more sea salt and black pepper.
Place lid on slow cooker and set to low. Allow pork to cook for 8-9 hours. Alternatively, you can cook it on high for 5-6 hours.
Once done, take the meat out of the slow cooker, remove any fat, if needed and shred the meat with two forks. Then, skim off some of the fat from the cider mixture, if desired. Finally, return the shredded meat to the slow cooker and mix well. Taste and adjust seasonings, as desired.
